Fabulous fall treat: pumpkin squares

Ingredients:

  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 4 eggs
  • 1 (15-ounce) can 100% pure pumpkin (not pie filling)
  • 1 ½ cups sugar
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract

Steps:

  1. Pre-heat oven to 350 degrees Fahrenheit
  2. Spray a 9×13 inch baking pan with nonstick cooking spray
  3. Mix together flour, salt, baking powder, baking soda, cinnamon and nutmeg in a large bowl. Set aside for later use
  4. Beat together eggs, pumpkin, sugar, vegetable oil and vanilla extract in a separate bowl.
  5. Slowly add the dry mixture from step 3 to the wet mixture from step 4; beat well.
  6. Pour the combined batters into pan and spread evenly within the pan
  7. Bake for 30-35 minutes, or until a toothpick can be inserted into the center and come out clean.
  8. Cut after it has cooled completely.
  9. Add toppings, such as whipped cream, candy corn, or sprinkle of cinnamon as desired before serving
